Burt Katz would be the first to tell you he wasn't a chef. So, when asked about his ability to make such amazing pizza, he explained, "| get along with pizza, we've become friends." Bock in 1962, before his relationship with pizza began, Burt and new wife Sharon made an epic journey. They boarded a tramp freighter in San Francisco; the only English speaking passengers among an international crew of hardened merchant sailors. They sailed to Japan where they bought a Toyota pickup truck, then trekked west through the Pacific Islands and across Asia and Europe. They drove through Pakistan, Afghanistan, Iran, and Iraq; countries many people would be afraid to fly over these days,

When they got back to Chicago a year later, Burt earned his pizza pedigree at The Inferno in Evanston. He went on to launch three legendary restaurants starting with Gulliver's in 1965, followed by Pequod's in 1971. He recreated the magic with Burt's Place in 1989 and, thanks to the internet, earned international recognition.

The span of our impressions of Burt went from hermit radio collector to Howard Hughes type genius. After Burt chose our family to carry on his legacy, the training began. We met several times a week up until his passing. Burt wrote nothing down so it was a constant back and forth searching for his approval. He told us he took all he had learned in his 50-year journey and put all of the best into his final spot, Burt's Place. We can assure you this is Burt Katz's recipes, methods, and philosophies.
